Because it's downhill of course!
Most of the time this cycle trip is done the other way around - LE JOG (Lands End to John O'Groats), not because it's downhill, but because the prevailing winds blow from the south west to the north east so it's more pleasant to have the wind at your back than in your face the whole time.
I'll review my foolish words when I've done the trip but I think that's all well and good if you are setting out to go fast. But I'm not aiming to do this at speed. I've picked a slower, safer more scenic route. I dont mind the wind. In fact in my experience unless the wind is right behind you it always seems to be blowing in your face to some extent.
The main reason for me to switch to the other way around is that there isn't much at John O'Groats. Its a bit of an anticlimax. Whereas for all its tourist tackiness, Lands End is a nice place to finish, and the sense of achievement should be much greater.
But like I say ask me when I've done the mileage!
